Raspberry Rhubarb Elderflower Fizz

Start by infusing a Raspberry Mimosa cocktail kit with gin.

  • 1.5 oz Raspberry mimosa infused gin
  • 0.5 oz St. Germain Elderflower liqueur
  • 0.5 oz Lemon juice
  • 1 oz Rhubarb syrup (1 cup chopped rhubarb, 1/2 cup sugar, 1/2 cup water. Bring to a boil, reduce heat and simmer until rhubarb is soft. Strain liquid through a fine-mesh sieve).
  • Club soda or sparkling water

Add all ingredients to an ice-filled shaker, shake to chill. Strain into a collins glass filled with ice. Top with club soda. Garnish with a lemon slice or rhubarb ribbons.
